Apple Pie Bites

I hate to waste things...

I mean I really hate to waste things.  I don't know why it bothers me so much to throw things away but it really, really, REALLY does.  So when Charly came home with left over apple slices that she wouldn't eat anymore because they were now brown, I had to find something to do with them.  

Now usually I would make apple sauce with them but I already have a pretty big batch of that in the fridge.  So...

I have been seeing on Pinterest all these ideas for personal sized apple pies and I thought they were so cute so I decided to try them.  

They are super simple and you get to use up the last bit of apple the kids wont eat and would usually throw away.  

And don't worry about the brown, you are going to be using cinnamon so they will never know they used to be brown.

aren't they great!  Here's the recipe I came up with...

Personal Apple Pies:

Ingredients:
  • leftover apple pieces (I actually had about 1 1/2 apples)
  • 1/4 tsp cinnamon
  • 1/4 cup sugar
  • splash of lemon juice
  • 1/4 tsp vanilla
  • 1 tsp corn starch
  • pie crust (store bought or homemade, here is my super easy recipe.  I like to keep a few in the freezer for whenever the right mood strikes.  Like today!)
Mix all your ingredients, except pie crust, in a bowl.

Roll out the pie crust and cut into triangles.

Take one or two slices of apple and roll them into the crescents.

I really liked the juice that was left over in the bowl so I poured that on top too.  Along with a little more sugar.

Place themspaced evenly apart on a greased cookie sheet and bake at 350 degrees for 25 minutes.

And they are so cute, don't you think?

And I am thinking I will just throw these in the freezer for the next time I have a craving for something sweet after dinner or, the next little get together I have, or whatever really!
