Ok, here goes, you are going to love it. It is pretty simple and totally sugar free if you so choose...
Sugar Free Strawberry Jam:
2 Quarts (8 cups) strawberries
1 cup water
3 Tbsp low/no-sugar added pectin
1 package no flavor gelatin
(1/2 cup agave if you like)
- Mix water, strawberries, and pectin (and agave if you want) in a large pot and bring to a boil.
- Boil for 1 minute.
- Remove from heat and whisk in gelatin for a full minute.
- Ladle into prepared jars
- place into a hot water bath for 10 minutes.
And there it is. Not too bad. Time from start to finish? Well, lets see, I made two batches and it took me about an hour so really maybe only 45 minutes for one. Not too bad to keep the family in jam for sandwiches for the rest of the summer at least, if not into the winter.
