Frozen Blueberry Pie

Frozen Blueberry Pie Filling

You can make this ahead of time so it is ready when you need a quick dessert to whip up.  It is a great time saver and the Pie itself turns out great.  It really stays together and doesn't run out when you slice it!  When was the last time you had a blubbery pie that did that, huh?  Ok, get excited, here it comes, the recipe is super easy and will be a great time saver...











Absolute first things first,








Wash your berries and get rid of all the gross ones.

Blueberry Pie Filling...


4 cups Blueberries
1/2 cup sugar
1/8 tsp salt
5 Tbsp tapioca flour
2 Tbsp almond flour
1 Tbsp fresh orange juice
1 tsp orange zest
1 tsp vanilla
1/2 tsp almond extract













Place half berries on a cookie sheet,











Crush them with the bottom of your measuring cup or any heavy cup or pot.





Add orange juice and zest, vanilla and almond extract.




In a separate bowl mix together sugar, salt, almond flour, and tapioca flour.















Combine wet and dry ingredients,
















fold in remaining blueberries.









Allow to rest for 10-15 minutes.




Place aluminum foil in bottom of pie plates.















Place pie filling in pie plates, cover with plastic wrap and place in freezer for use at a later date.













And there it is after it has been frozen.  Ready for your next get together!



When you are ready co bake it, preheat oven to 325 degrees and bake on bottom rack for 1 hour 15 minutes.  The edges will be bubbly and delicious!

I will post a homemade pie crust recipe tomorrow.  You are welcome to use a store bought pie crust but I will warn you, mine is better!  ;)
