Instant Pancake Mix and Breakfast For The Kids

Homemade Pancake Mix

You are going to love this pancake mix.  I always have some mixed up in the pantry, ALWAYS!!!!



The recipe I use is one of Alton Brown's.  You can find it here at the Food Network's website.  And I love this recipe.  The best part of making your own mix is first, you know exactly what is in it.  You can make it all organic, or add different spices, whatever your family likes.  


All his recipe calls for is:

*28oz (about 6 cups) flour
*1 Tbsp baking powder
*1 1/2 tsp baking soda
*1 oz (about 1/8 cup) sugar

(and yes, I do weigh my ingredients.  Although it has only been recently, I find it so much easier quite frankly.  All I have to do is throw a bowl on the scale, zero it out, and start dumping flour in.  plus you have a more exact amout without sifting, which I am all about.)  


Put all the ingredients together in a bowl and mix it up.  There is enough there for about 3 batches of pancakes.  


Now to make the panpcakes...

*10 oz (about 1 1/3 cups) pancake mix
*2 large eggs
*2 cups buttermilk
*2 oz butter (I prefer unsalted)

I also like to add vanilla and almond extract, cinnamon, alspice, and ground cloves.  Just a splash of each of the extracts and a sprinkle of the spices (especially the ground clove, a little goes a loooooooooooooong way!)

Melt the butter, mix with the eggs and milk, add all together.  (Ok, his recipe is a bit more specific about adding the fats with the fats and the other liquids together then adding all together with the pancake mix but I am not nearly that particular.)  DON'T overmix.  It's ok if there are lumps.  


See, even the little ones can help.  

Now lightly butter the pan, and start cooking.   




Add a couple chocolate chips for a face if you would like and there you have it.  A fabulous breakfast for the family. 


Now I like to have a hot breakfast for the kids in the morning, but many times I don't have time to make pancakes and eggs and things nor will they eat an entire batch every morning.  So what I have started doing is making a double or even tripple batch of pancakes on the weekends and putting the rest in the freezer to take out any morning the kids want them during the week!!!  How great is that, they get a hot breakfast, it is cheap and easy for you, and you know what is in it, no preservatives, no chemicals, only the best for your fabulous family!  I usually use the toaster to heat them up but the micorwave works just as well, I just like the little crunch on the outside rather than soggy.  Personal preferance really.

Single serving baked apple pies

Simple Single Serving Apple Pies





























Oh my gosh, these were so cute and so easy to make.  I think they would be great for entertaining. Perfect size serving, one for each guests.  (Or two or three, they wont be able to stop...)


Umm, ok, why waste time, here is the recipe, you are sooo going to have to make these!


So, start with your favorite pie crust...
Here is my recipe if you are in need of one.  Its my super simple extra flaky pie crust, a favorite around here, but a store bought one will work just as well.


Now cut your apples in half and core them...


Wrap the pie crust around the outside of the apple...


Sprinkle with cinnamon and sugar (a helper with this part is almost essential)


And bake at 350˚ for about 30 minutes.


Here is how they look straight out of the oven.

Top with some homemade whipped cream and viola!  AMAZING!!!!!  Your family will love you if you make this for them and your guests will think you are a genius!

"Individual pies, who has time for that?" They'll say, only you will know that it will take you less time than making a whole pie and dishing it out for only 8 pieces.

Just sayin'

Activities With Kids

Toilet Paper Roll Flowers with Decorated Vase 


So can I start out by saying I have the best babysitter EVER!!!!!  Every time I have her come over she has a new craft for the kids to do!  Then she texts me pics of what they're doing and how much fun their having!!!!  Quite frankly I can't say enough about her, but for the purposes of this post, here is one of the crafts that she came up with for the girls to do while I was at work one night...




Aren't they soooo cute?  And the kids loved making them, they were so proud of them, we had to use them as a centerpiece for about a month.


So all you are going to need is:
-a few toilet paper rolls
-colored tissue paper
-bamboo skewers
-an empty can
-paper and markers



cut slits all around each end of the toilet paper rolls, and stuff full of tissue paper


Tape a piece of paper around the can...


And let them go to town decorating!


My kids are crafters at heart (I don't know where they get that… it's weird) so this kept them entertained for like and hour.  A fabulous activity for the kid do's.  They are going to love it!

DIY Kindle Cover Tutorial

Manly DIY Christmas Present…

So this year my husband and I decided to do homemade gifts for each other.  And it was HIS idea!!! Can you believe that?  I was sooo excited to get started but I wanted to make something I thought he would use daily and really really LOVE.  You know?  I mean REALY love!  

Here is what I came up with:


A kindle cover made out of an old book!  Want to make your own?  It seriously took me only about 20 minutes. 


Ok, so you are going to need:
-an old book (I found mine at the thrift store for about a dollar
-a small scrap of fabric
-some thin cardboard (like a serial box)
-elastic
-and glue

So the first thing you are going to need to do is pull all the pages out of the book.  (this was painful for me!)

Just take a pair of scissors or knife and cut along the spine in the front and back of the book and pull, the pages will come right out.


Now cut your cardboard piece a bit smaller than the size of the book.


Then cut your fabric piece.  It needs to be bigger than the cardboard so you can wrap the edges.



Ok, time for the glue.  Spread it all over the cardboard to attach the fabric.  I used mod podge so I could get it nice and flat but any glue will work.


Start wrapping your elastic.  You will wrap 2 edges and then you will have to cut a small slit in the center to pull the other 2 pieces through.


glue those in place as well


And glue your fabric wrapped board to the book itself.


Done!  Ta-da, ta-da!


Don't you just love it?  I do.  I loved it so much I had to go back to the thrift store to make a couple more!  Christmas, Christmas, Christmas people!!!!!

2 Minute Bathroom Accessories

Q-Tip and Cotton Ball Jar


Isn't this the cutest thing ever?  I seriously love it!  Ok, I may feel a little silly blogging about it but I really thought it was so cute, I just had to share.  


And made from things I already had in  my house.  As a matter of fact, I needed to clear out some of my junk just sitting collecting dust.  I truly love the blue ball jars and the old insulators.  I have several and just cant bring myself to get rid of them.



I thought this was a great way to integrate the look into rooms other than my kitchen too!




All you are going to need is a canning jar and an old insulator.


Fill the jar with cotton balls....


fill the insulator with Q-tips....


And fit the insulator on top of the jar!  See, almost too easy to share with you.  But ho wmuch do you love it.
