DIY Mayo - who knew!

The Easiest Kitchen DIY Ever!!!!

Seriously, this is one of the quickest and easiest things I have made in the kitchen.

You are never going to believe how easy this is, and once you've done it, you'll never buy it again!  Just sayin'

All you are going to need is

an egg and
a quarter cup olive oil

Thats it, really!    (Now if you don't love the taste of olive oil then you can replace half or more with safflower oil.)

Put the egg and oil in your measuring cup

add some other flavors if you want, you can see what I like to add to mine, but plain is fine too!

Put in your stick blender, turn it on.

The last step to this step literally takes about 10 seconds.  It whips up into mayo and you are done.  

It will last in the fridge for me for about 2 weeks.  That is why I only make up a small batch at a time, but you can use it for whatever you want, sandwiches, potato salad, ranch dip, whatever!
