Zucchini Cinnamon Raisin Bread

Aaaaaaahhhhh......

There everywhere, zucchini, it's still taking over my house!!!!!!!

Seriously, I don't even know what to do. So I have been trying to get creative, zucchini bread is great but I want new flavored too.

So here was an experiment and I have to say for the first try it turned out excellent!  (Trust me, it doesn't often turn out just right the first time.)
First you will need to shred your zucchini.  This is how I do it because I have sooooooooooo much!  I often will even shred it and freeze it so I can make it throughout the winter.


Zucchini Cinnamon Raisin Bread:

1/2 cup sugar
1/2 cup shortening
2 cups shredded zucchini
2 tsp cinnamon
1 egg
1 cup warm water
1 pkg active dry yeast
3 cups flour

Cream together sugar and shortening. Add shredded zucchini, cinnamon, and egg. Mix thoroughly.

Combine water and yeast. Add to mix.

Add flour.

Place in a greased loaf pan in oven at 350 degrees for about 50 minutes.


And there you have it. This bread is a little lighter than your usual zucchini bread, and has that great breakfast bread feel to it.

Just a little something new to do with your zucchini this year.
