Easy Giant Meatball Dinner

Meatball and Rice Dinner

So I was having a hard time coming up with dinner ideas the other night and I called Lil' sis.  She says hey, I heard about these giant meatballs. It was on Food Network, Paula Dean called them Porcipine Balls becasue the rice pokes out the top as they cook.

Here is my interpretation.

Giant meatball Dinner

Ingredients:
1 can diced tomatoes
1 can beef broth
1 cup rice, divided
1 lb ground beef
1 egg
1 tsp basil
1 tsp oregano
1 tsp salt
1 tsp pepper



Mix the beef with the seasoning, egg, and 1/2 cup rice. 

Roll into meatballs into large balls. For one pound, Paula only made 9 meatballs, and place in 9x13 pan.  

Place broth, can of tomatoes, and remaining rice in bottom of pan.  

Place in oven at 350 degrees for 1 hour.  



and done!!!

They ended up with this really yummy crunchy top and were sooooo moist in the middle.  
I thought they would be really great with some cheese on top, you know, if your into that sort of thing.  Which I am, Always.  Isn't everything better with cheese?  Just a thought.

  1. I made this for dinner tonight but only had ground turkey. I made it pretty much the same only using chicken broth rather than beef and added feta cheese to the meet mixture.....delish!

  3. Sorry about not getting back to you sooner, I tried to leave a reply about a week ago but apparently it never posted! So here goes again…

    I like to serve this meal with either a big salad, or some other green veggie, i.e. peas, green beans, etc. Noodles are always a hit at our house, even though there is rice in the dish, and as with any good Italian flavored meal, bread! Garlic bread is a hit, cheesy garlic bread, or just plain with butter. What is it about italian meals that require bread. If you are trying to avoid carbs though I would go with a nice wedge salad!
